Cheese was at the heart of our business, so we called ourselves The Fine Cheese Co.: We have always been selectors and affineurs of the best artisan British and European cheeses. We had a motto that remains true: ‘Seek out the best, and, when you’ve found it, keep looking’ and, because of our obsession with quality, our business has grown – not least in the USA, where we have been for 20 years. We loved cheese and we did not want it to be lonely. So, 15 years ago, we bought a long-established bakery to give our cheese a partner for life. We named it Artisan Biscuits, and here we use generously only natural ingredients. We sift, weigh, mix and work our dough the old-fashioned way and apply the same hand-baking methods we have for decades. We were the first to link specific crackers with specific cheeses – an idea copied so many times. But our pairings are authoritative because we remain the only artisan cheese company with its own bakery.
